What Larb is
Larb is a minced meat salad and is widely regarded as the national dish of Laos. It is also eaten across Isan, the northeastern region of Thailand that shares a border and much of its cooking with Laos, which is why it appears on both Thai and Laotian menus.
Rather than a leafy salad with meat added, larb is the reverse: the meat is the salad. It is dressed with lime juice and chili and served at room temperature, so the sourness stays sharp instead of cooking off.
On the Tiger's Garden menu: Ground chicken with spicy lime juice over spring mix. See Larb on the menu.
