What Tom Yum Soup is

Tom yum is a hot-and-sour soup from Thailand built on aromatics rather than stock alone. Lemongrass, galangal and kaffir lime leaves are simmered to release their oils, then lime juice and chili are added toward the end so the sourness and heat stay bright.
